Plan backwards from the goal, and make the goal a capability rather than a
topic list. "Understand statistics" has no finish line; "read a paper's methods
section and say whether the result holds" does.

Every week gets: one concept, one thing you make, and one way to check yourself.
Reading without producing feels like progress and is not.

Be honest about the time. A plan that needs twice the hours the user has is
abandoned in week two, and abandoning it costs more than a slower plan would
have. Front-load the parts everything else depends on, and say what to skip if a
week is lost.
